Our award-winning chef is renowned for his special South Indian cuisine. All these dishes are prepared in a traditional country style. Recipes have been handed down in one family from generation to generation. The names of the dishes might seem familiar but the flavours are very different.

Banana Leaf Special Madras
- Madras dishes have a reputation for being fiery and hot but cooked by our chef in the correct South Indian way they have a bite and flavour that is distinctive. Onions, coriander and curry leaves form the basis of this recipe. Slow, careful cooking of the spices in vegetable oil ensures that taste and texture are preserved.

Goa
- Goa, on the west coast of India, is well known for its sun, sea and sand. Goan food is always hot but tasty. Cooked with a thick sauce our dishes are especially prepared to bring out the maximum flavour with that extra bite.

Northern India
- Many people are familiar with Northern India’s tandoor, a clay oven fired by charcoal and seasoned with mustard oil, buttermilk, jaggery and salt. The more recent invention of Balti cooking, also using the tandoor, has proved equally popular. A korai is a hot iron dish in which the ingredients are cooked.
